One year in Melnik wine and another month or two: this is how “Melnik Monks” – the unusual speciality of Zornitza Family Estate that turns cheese into a true gastronomic experience.

An unusual meeting of cheese and wine takes place in the heart of the Melnik region. Zornitza Family Estate's new speciality begins life as goat's and sheep's cheese, but instead of taking the traditional path of ripening, it spends a full 12 months immersed in Melnik wine.

After a year in the wine, the process continues – the cheese is taken out and left to dry for another month or two, and the finishing touch comes with a few weeks under vacuum. Only then is it ready for the table.

The name is not accidental either. At Zornitza Family Estate we call it “Melnik Monks” – a name that carries a sense of patience, time and tradition, in which wine and food are part of one shared ritual.

The result is a cheese with character, in which the time spent in wine leaves its mark. Goat's and sheep's milk meet the aroma of Melnik wine, and the long ageing turns the product into something far different from ordinary cheese.
